Blueberry Banana Pancakes

Trying to decide if I should do a little 3 mile shake out run today or just ride the horses.  First world problems....
While I decide and as promised... 
here is the recipe for my "18 mile fuel"-

Blueberry Banana Pancakes


Is there anything better than blueberry pancakes on a weekend morning?  Nope.  
Well, maybe eggs benedict.
  But that's a little labor intensive 
and requires A LOT of butter... so blueberry pancakes it was.  

During the week when I have a pancake craving  I do the "healthier" pancake... 2 eggs 1 banana for the batter- easy simple- that's it.  But I was running 18 miles and if there was ever a time I deserved real pancakes...
 it was now. 



I had frozen strawberries and blueberries in the freezer and after seeing blueberry pancakes somewhere (tv maybe)  I decided I needed them asap.  I looked up a quick recipe and made a large batch of blueberry pancakes, some for Saturday morning and leftovers for Sunday morning.  A weekend of pancakes. 




After I made the batter I decided to make a quick blueberry "sauce" to top the pancakes with.  And then I saw some bananas staring at me and figured - yep.  This is happening.  banana blueberry pancakes.  I would recommend putting some bananas in the batter like the blueberries, but I wasn't thinking fast enough on Saturday morning.   Blueberries in the batter, bananas on top, drizzled with honey and blueberries I had cooked in the pan with a dash of sugar.

(makes 8-10 pancakes)
I used Recipe Girl as a base recipe and anything in ( ) I added in :) 
1 1/2 cups all-purpose flour

1/4 cup granulated white sugar

1 teaspoon baking powder

1/8 teaspoon salt
3/4 cup milk + more to thin out the batter, as needed
1 large egg
1 Tablespoon vegetable oil
1/2 cup fresh or frozen blueberries
(dash of cinnamon)
(1 banana)
(honey or syrup!)

Directions:

1. Whisk together first 4 ingredients; make a well in center of mixture. (I added a dash of cinnamon). 
2. In a separate bowl, whisk together milk, egg, and oil; add to dry ingredients, stirring just until moistened. Gently fold in blueberries. (add bananas in the batter if you would like!)
3. Pour about 1/4 cup batter for each pancake onto a hot, lightly greased griddle. Cook pancakes until tops are covered with bubbles and edges look cooked; turn and cook other side.   Top with blueberry sauce, bananas, and honey.  ENJOY!
