Chicken Roll Ups

As promised:  
A recipe to make up for the quiet week here on RAR! 



A friend told me she had chicken breast and wasn't sure what she wanted to do with it for dinner.  I shot some ideas with her and we found one that sounded quite yummy.  Chicken roll ups.  You can use what ever you have hanging in the fridge to stuff these chicken chests.  

I used:  Parsley, Cilantro, Onions, Garlic, Shredded Cheese, Spinach, Salt and Pepper. 


The key to a nicely stuffed chicken roll up is to really pound out your chicken breast nice and thin.  I didn't pound mine enough so they didn't roll up as nicely as I hoped.  That's okay, they kind of morphed into stuffed chicken breasts and I used a few skewers to keep them in place.  


I cooked the onion and spinach down a little bit before stuffing it in my chicken.  When I say "stuffing"  You simply lay the breast flat, spread out your filling on top of the chicken and roll her up!

On top of the chicken I put a little bit of light mayo and a sprinkle of parmesan cheese for a nice crust and juicy chicken.  



I roasted up some potatoes to go with my chicken.  If you want your potatoes nice and cripsy, soak them in water for a little while before you dry and roast them.  I roasted them in the oven with a little bit of EVOO S & P at 425.  




I quickly cooked some green beans in the sauce that came from the chicken stuffing and viola.  DINNER!  I was really happy with the outcome, but next time, I am going to cut the chicken breast in half lengthwise and pound them out a little better.  




I am kind of a make up your own recipe kind of gal, but if you like to go by the book, here is a similar recipe.  Enjoy!
